400g boiled potatoes
600g spelt flour type 630
1 yeast cube
1 tsp. salt
1 tsp. bread spices
Bake potatoes, peel and squeeze. Let cool. For the dough, dissolve yeast in 4 – 5 tbs. water. Blend flour, potatoes, salt and spices smoothly. Allow to rise at a warm spot for 2 hours. Knead the dough on a floured work surface carefully. Separate into 14 – 16 pieces of the same size in the shape of buns. Bake in the pre-heated oven at 220 degrees Celsius for 20 – 30 minutes.
