In village Ratina, between Kraljevo and Krusevac, 7 km on south from Kraljevo, every first week in September is manifestation Projada. This year it was 10 years of this event. It implies nice stands with different sorts of corn bread available for degustation and for competition. Manifestation is in big school yard with visitors from Kraljevo, Cacak, Krusevac and neighbor villages.
Corn bread is sort of bread made from corn flour. It can be white or yellow. Best flour is from special sort of corn – osmak – because it has eight grains in lines round corn cob (osam on Serbian is number eight). Corn bread is making with water and flour without salt and using as bread.
Projara is kind of corn bread with additives – cheese, kajmak, oil, eggs, greens, nettle, salt and mineral water. In south Serbia they add fried leek, in Vojvodina – pumpkin. For Serbia it is characteristic white flour and for Vojvodina yellow.
Polenta is sort of porridge made with water, corn flour, salt and pig fat. Sometimes they use vegetable oil. It is eaten with cheese, kajmak or milk. In south Serbia they add pork, fried onion with pepper.
Projada in Ratina is colorfull manifestation with degustation and fun for all visitors and with some stands with old handcrafts.
