Rottweil-Göllsdorf (D-78528)

  • The currently existing bakehouse was built in 1843.
  • First, it was used as a wash house, then as a prison.
  • When private baking ovens were forbidden by decree, the building was remodeled to be used as a bakehouse again.
  • Long time ago, there were five bakehouses in the village of Göllsdorf, but only one of them has existed until today.
  • It has a wood-fired baking oven.
  • This oven is heated by fir tree branches – without needles. This traditional method results in a very specific taste.
  • On the sides, the bakers always add some beechwood. This results in better top heat and serves to lighten up the oven which is not equipped with any illumination system.
  • Nowadays, baking takes place once a year only.

  • Late in August or early in September the big bakehouse fest organized by the Göllsdorf Citizens’ Association takes place.
  • Last year, 160 kg of dough were prepared to bake 500 onion tarts and 80 breads.
  • A professional baker prepares the dough and delivers it in portions of 1 kg.
  • At the bakehouse, the breads are formed, and the dough for the onion tarts extended and formed to round pads. Then the so-called “ointment” is put on those pads, and the onion tarts can be put into the oven.
  • In addition to onion tarts and breads, they also bake 30 to 40 apple cakes.

Rottweil-Göllsdorf (D-78528)

  • 1843 wurde das heutige Backhaus erbaut.
  • Zuerst war es Waschhaus, später dann Gefängnis.
  • Erst nachdem der Erlass mit dem Verbot privater Backöfen kam, wurde es zum Backhaus umgebaut.
  • Zu dieser Zeit gab es 5 Backhäuser in Göllsdorf, eines hat überlebt.
  • Es hat einen Holzbackofen.
  • Geheizt wird mit Tannen Astholz – ohne Nadeln. Das ist Tradition und gibt einen spezifischen Geschmack.

  • Seitlich wird immer etwas Buchenholz in den Ofen gelegt. Es dient zur Verbesserung der Oberhitze und vor allem zur Beleuchtung. Der Backofen hat kein Licht.
  • Heute wird nur noch einmal im Jahr gebacken.
  • Ende August / Anfang September findet das große Backhausfest statt. Es wird von der Bürgervereinigung Göllsdorf organisiert.
  • Im letzten Jahr wurden 500 Zwiebelkuchen und 80 Brote gebacken. Dazu waren 160 kg Teig notwendig.
  • Der Teig wird von einem Bäcker gemacht, er liefert diesen in 1 Kg Portionen an.
  • Vor Ort werden dann die Brote geformt und der Teig für die Zwiebelkuchen in runde Platten auseinandergezogen. Dann kommt die sogenannte „Salbe“ auf den Kuchen und der Zwiebelkuchen kann in den Backofen.
  • Neben Zwiebelkuchen und Broten werden auch 30 – 40 Apfelkuchen gebacken.
